Originally envisioned by Michelin-starred Chef Akrame Benallal, the restaurant continues to evolve under his guidance, paying tribute to Morocco’s rich culinary heritage, deeply rooted in tradition, terroir, and the spirit of sharing.
A member of the Mandarin Oriental family since the resort opened ten years ago, Chef Hind draws her inspiration from the women in her family. From her grandmother and mother, she learned the art and generosity of Moroccan cooking. Born and raised in the historic Kasbah district, she remains inspired by the alleyways, the scents of spices, and the rhythm of the Medina that shaped her.
Among her signature creations, the Tangia Marrakchia—an iconic dish of Marrakech—and her delicate Pigeon Pastilla perfectly embody the way she shares the Morocco she knows best. At Shirvan, she reveals the Morocco she loves: a Morocco of generosity, seasonality, and stories passed down through generations.
